Last Minute Budget Friendly Dinner

A dinner club menu doesn’t have to take all day or be overly complicated. This budget friendly dinner is built to feed a small crowd or provide leftovers for later in the week.

This one is all about comfort with friends without breaking the bank. This will be a little different than my other virtual Dinner Club menus because I’ll be breaking down the price and showing you where you can change up the recipes to fit your family or guests. This menu also works swimmingly for an easy weeknight dinner.

Stuffed Pepper Skillet: From Valerie’s Kitchen

I love this recipe as a base, the only thing I change on it regularly is the type of cheese I use. I usually use cheddar or mozzarella depending on my mood. Spoon it into a bowl and serve. Bell peppers are usually 2 for $5 once a month in my area or $3 each not on sale, yes that’s not budget friendly to some people. But this cost is totally worth it for the nutrition even if you are hosting a fun night.

Cheesy Toast: Savory with Soul

Salad Kit: Taylor’s Green Goddess Chopped Salad or Taylors Ultimate Cheddar Ranch Chopped Salad

In this situation, salad kits are the way to go! They come out more budget friendly than what it would cost for the ingredients. Plus it is a dump and go with no left overs going back into the fridge! Each kit is about $4, which feeds about four people depending on how much each person serves. One bag usually feeds two people in my family (we love our extra vegetables).

Pound Cake, Strawberries & Cream: Sara Lee’s Frozen Pound Cake, strawberry compote (broke bank vegan) and whipped topping.

Sara Lee’s brand is about $5 per cake, which serves about 6.

Frozen strawberries are around $4 per pound, which also serves about six once it’s cooked.

Serving & Extras

There are no fancy decorations for this one. You could use a vinyl table cover, or a basic cotton tablecloth. I prefer a basic cotton tablecloth. Why? Because it’s washable. If someone accidentally uses it as a napkin for your hands (or not accidentally) just throw it in the washer after everyone goes home. 

Family style, serve in the skillet meal. Mix the salad in the serving bowl. Use a plastic serving tray or dinner plate for the cheesy bread. Easy clean plastic plates and metal cutlery. Paper napkins all the way; invest the extra dollar for the ones that will actually hold up to saucy meals.

Round it Out

Whether your dinner club is a social gathering or a weeknight dinner that you want to upgrade a little it doesn’t have to break the bank. This menu and set up work great for impromptu guests and/or family visiting from out of town.
